Silken Tofu Mac and Cheese
from Sonya’s Kitchen
Ingredients:
- 12 oz uncooked whole wheat elbow macaroni
- 12 oz silken tofu
- 2 cups low-fat shredded cheddar cheese
- 2 tbsp low-fat milk
- 1 tsp sour cream
- 1 tsp Dijon mustard
- 1 tsp salt
- ½ tsp garlic powder
- 1/8 pinch black pepper
- 1 pinch cayenne pepper
Instructions:
Cook macaroni according to package instructions in salted water. While cooking, combine all other ingredients in a food processor or blender until smooth. When macaroni is done, drain well, and return to warm pan. Add tofu-cheese sauce and heat over low heat until gooey and smooth. Serve immediately.
Note – this dish can be made ahead and combined in a cooking sprayed lined 2 qt casserole. Just over and bake at 350 degrees for 20-25 minutes until bubbly.
